Boursin Mashed Potatoes

Ingredients

  • 1 1/2 pound red potatoes washed and diced
  • 1 box Boursin Garlic & Fine Herbs cheese crumbled
  • 1/4 cup hot milk
  • 1/2 tsp chives
  • 1/2 tsp garlic powder
  • 1/2 tsp dried parsley
  • Salt and pepper to taste

Instructions

  • Wash and cut the potatoes into 1 inch pieces. Add to a 2 quart pot and cover with water.
  • Bring to a boil and let cook for about 10 minutes until fork tender.
  • Once the potatoes are tender, drain and mash.
  • Stir in the Boursin, milk, parsley, chives, and garlic powder. Salt and pepper to taste.
  • Serve
