Basil & Goat’s Cheese Frittata

Ingredients

  • 5 slices of bacon chopped
  • 1/2 cup spinach torn in half
  • 8 large eggs
  • 1 cup milk
  • 1/2 tsp salt
  • 1/4 tsp crushed red pepper
  • 1 tsp dried basil
  • 1/4 tsp black pepper
  • 4 stalks green onions sliced and separated
  • 4 oz mozzarella shredded
  • 4 oz goat’s cheese cut into pieces

Instructions

  • Preheat the oven to 350 degrees.
  • In a large bowl mix together the eggs, milk, salt, red pepper, basil, black pepper, mozzarella, and spinach. Set aside.
  • In a 10-inch Dutch oven cook the bacon down. Remove with a slotted spoon and place on a paper towel lined plate.
  • Add the white parts of the onions and cook for about 1-2 minutes.
  • Stir the bacon into the egg mixture and pour into the Dutch oven.
  • Place the pieces of goat’s cheese over the top of the egg mixture.
  • Bake in the oven for 25-30 minutes until the eggs are set.
  • Garnish with sliced green onions and serve.
